It is around 1890 that a French lawyer, Gustave Rousset, invents this oven made of Terracotta called “réfractaire” (resistant). Baked in their own steam, without adding any water or oil, vegetables keep all their nutritive qualities and develop their own tastes. It is also perfect to cook chestnut or to bake and roast green coffee beans. How the Terracotta is made is a secret and traditional recipe invented by The Manufacture who has exclusive rights over this product. It can be used in the oven, in the embers of an open fire or those of a barbecue.
